Japanese Braised Short Ribs

Straight out of the "Salt" episode from "Salt Fat Acid Heat" on Netflix. After watching Samin make her delicious dish on the show, I just had to take a stab at this dish.

Ingredients:

Marinade:
1/2 cup of mirin
1/2 cup of soy sauce
2 tbsp of miso
1tbsp brown sugar
3-4 cloves of garlic, minced

1 tbsp oil
6 large cuts of beef short ribs
6 cloves of garlic

Broth:
1 packet of dashi
2 tbsp of miso
1/2 cup of water

green onion for garnishing

Instructions:

1. Mix the mirin, soy sauce, miso paste, brown sugar, and garlic together then pour over the meat in a ziploc bag. Let it marinade in the fridge overnight.
2. Put oil in a cast iron pan over medium heat. Once pan feels hot, place short ribs into the pan and sear each side for about 2 mins each or until it’s dark brown. You can fit maybe 4 ribs at a time, do not overcrowd the pan.
3. Once the short ribs are seared, place ribs and garlic cloves in an oven proof rectangular dish.
4. Mix together the water, dashi packet, and miso and pour into the rectangular dish until it covers a quarter of the height of the ribs.
5. Cover the dish with tin foil and bake at 300c for 2.5 hours.
6. Remove tin foil cover and bake for another 30 mins.
