Black Bean Brownies

Ingredients:

  • 1 can (398ml) of black beans, strained
  • 3 large eggs
  • 1/2 cup cocoa powder
  • 1/2 cup brown sugar
  • 1/2 tsp oil
  • 1 tbsp milk
  • 1 tsp balsamic vinegar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup of dark chocolate chips

Instructions:

  1. Preheat oven to 350F
  2. Put all ingredients except for chocolate chips in the blender and blend for about 3-5 mins, or until the batter is relatively smooth.
  3. Stir in the chocolate chips to the batter until evenly combined.
  4. Pour batter into a parchment paper lined 9X9 baking pan with at least 1.5in sides.
  5. Bake for 30-35 mins, or until the toothpick comes out clean.
  6. Let cool for at least 15 mins before eating. The cooler it is, the less crumbly it’ll be.
