Banana Muffin

A simple go-to recipe for banana muffins. Easy to make and adapt to any taste. You can add chocolate chips, nuts, and whatever else you like.

Ingredients:

  • 3 ripe bananas
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup of butter (melted)
  • 1 1/2 cup of flour
  • 1/4 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup of chocolate chips (optional)

Topping

  • 1/4 cup of butter, melted
  • 2 tbsp of flour
  • 1/4 cup of sugar
  • 1/2 cup of quick cooking oats

Instructions:

  1. Preheat oven to 350c.
  2. In a large bowl, mash the bananas and egg until smooth.
  3. Add in melted butter and vanilla extract, stir until combined.
  4. Add flour, sugar, baking soda, baking powder, and cinnamon to the mixture. Mix until well combined.
  5. Fill a greased muffin tin with the mixture and set aside while you make the topping.
  6. To make the topping, add melted butter, flour, sugar and quick oats in a small bowl. Sprinkle evenly over the muffin mixture.
  7. Put into preheated oven for 20-30 mins, or until stick comes out clean.
