
This classic banana bread recipe is easy to make and fun to adapt. It’s a family classic, and my son’s favourite snack simply because he can pick off all the chocolate chips. Feel free to add your favourite toppings like chocolate chips, almond slices, or whatever tickles your fancy.

1/4 cup butter
3/4 cup of brown sugar
2 eggs, beaten
3 bananas, mashed
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon powder
1 tsp vanilla
1) Preheat oven to 350ยบ.
2) Cream together butter and sugar.
3) Add eggs and crushed bananas, combine well.
4) Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
5) Mix just until combined. Do not overmix.
6) Pour into greased and floured loaf pan, or line with parchment paper.
7) Bake at 350 degrees for 55 minutes.
Keeps well, refrigerated.
