In a separate container, stir together oil, honey, and vanilla extract
Pour mixture into the bowl with the oats and mix well.
Spread granola evenly onto 1 or 2 baking sheets lined with parchment paper. Make sure it’s spread out sparsely, otherwise it won’t get crispy.
Place baking sheet into oven for 8 mins. Take out the baking sheet and flip the granola around before placing it back in the oven for another 5-8 mins, or until golden brown.
Take the granola out of the oven, and let it cool completely. It will be crunchy when it’s cooled.
