Oat Flour Banana Cinnamon Pancakes

In my quest to cut out the refined white starch in my diet, I started exploring with oat flour to make my usual breakfast favourites. This recipe did not disappoint. It’s not the same as the traditional white flour pancakes, but a healthier alternative.

Ingredients:

1 medium ripe banana
1 large egg
1/2 tsp pure vanilla extract
3/4 cup of milk
1 tsp cinnamon powder
1 tsp baking soda
1 tsp baking powder
1 cup oat flour
2 tbsp of melted butter

Instructions:

1) Heat a non-stick pan on low-medium heat. It is very important that the pan is heated up slowly.
2) Mash the banana and egg together in a large bowl there are no more lumps.
3) Add vanilla extract and milk to the banana mixture, and stir.
4) Add the cinnamon powder, baking soda, baking powder, and oat flour to the mixture. Stir until batter has a smooth consistency.
5) Add the melted butter and stir until combined.
6) Scoop spoonfuls of batter onto your heated pan, with at least half an inch space in between.
7) Once the base of the batter looks cooked and you start to see some bubbles appear in the batter, flip the pancake and let cook for another minute or until golden brown.
